Reflection

In a student’s life development of writing skill is very important. Writing clearly and concisely is crucial in the field of nursing. And being a nursing student I must be able to write formal essays with proper usage of English language. I need to develop cognitive thinking and write consciously. In nursing writing serves the purpose of communication. A nurse must be able to write care assessments, notes on patient’s health, do case studies and write legal notes. I have been writing in English throughout my life yet I became aware of skills, styles and formats required to write proper essays only after taking this class. My writing skill has developed a lot more than before. But still there are areas I need to work on and improve my writing. Through this class I understood the importance of thinking deeply and consciously writing. Organizing and incorporating facts, researching and being aware of my audience while writing.

At first I was very skeptical about my writing ability. In high school I was never taught to write scholarly and apply cognitive thinking in my writing. In fact I hated writing essays and I thought writing was not my forte; I do not have flair writing skills. However my perception about my writing skill has changed. Throughout this semester my writing skills have developed. I did have any idea about writing formats, styles, organizing and incorporating facts.  The theme of the class was food, and the book Fast Food Nation by Eric Schlosser was very interesting. At first it seemed very boring but as I began reading it, it opened my eyes and changed my whole perception of looking at fast food companies and meat. Before this class I had some idea that fast food is not good for health and I tried to avoid it as much as possible. But after reading the book I understood, the dark secrets of fast food owners and their motives, I have much more understanding of how the fast food company started and gained popularity. Deeper understanding of how these companies operate, target children, young teens and treatment given to young workers. This book exposes its readers to the reality behind factory farms, slaughter houses and suffering of the workers.

Also through my research I gained a profound knowledge of food borne diseases and how eating alternative foods like organic food is better for our health. Personally I have completely stopped eating fast foods, also trying to consume less meat and eating outside.  

Before this class my writing was much disorganized and uses to write whatever came in my mind but now I think many times before tying it down.  Often I was told that my writing lacked organization, had much more grammatical orders and had the habit of wondering away from the topic. Now I write clearly and I make sure I write develop my essay according to my thesis.  

But still have to work on my grammar and writing in class essays.  I also need to write on time; usually I take long hours to write one essay. But definitely I can see the changes in my writing and thinking. Not only did I learn from my professor but also from my friends who helped me to proof read. I also learned to look for help, for the first time I used the writing center and the student government hall. I understood the importance of writing and how it is so different than talking. I also started to actually write in my journals and maintain it. At first the class seemed boring but as time passes I enjoyed it more. I also enjoyed writing that is a huge achievement for me. EXTRA CREDIT

 I decided to make brown rice, yellow lentil soup, baked salmon, broccoli and simple arugula and cucumber salad..

I decided to make this because it was my turn to cook dinner and as Asian, rice and lentil is my staple food. 
1. THE SHOPPING





I went to my local Chinese grocery and found everything. I brought organic arugula for $ 3.50, four cucumber for $1.50, broccoli for $1.50 and salmon for $15.39. I already had brown rice, lentil and other ingredient at home.

ORGANIC ARUGULA
1. BROWN RICE: Servings: 5, Calories: 150, Fat: 0 g, Protein: 3 g, Carbohydrate: 32g, Fiber: 1g, Sugar: 0 g, 1 cup natural brown rice (I used long grain) and 8 cups cold water.

Directions: Rinse the rice with cold water for 30 seconds. In large heavy pot with a tight fitting lid put the rice and 8 cups of water. Slow cook the rice under low flame for 40-50 minutes.





2. Baked broccoli: Serving: 4, carbohydrates: 2%, fat: 1%, dietary fibers: 9% and proteins:                        3grams.


·         Ingredients one head broccoli, two cloves of garlic, two table spoon olive oil, one pinch of salt and pepper and one tea spoon lemon juice.

1.      Preheat the oven to 400 degrees F.
2.      In a large bowl, toss broccoli florets with the extra virgin olive oil, sea salt, pepper and garlic. Spread the broccoli out in an even layer on a baking sheet.
3.      Bake in the preheated oven until florets are tender enough cook for 15 to 20 minutes. Remove and transfer to a serving platter. Squeeze lemon juice over the broccoli before serving.





3. Baked salmon: Serving: 118, dietary fiber: 0%, cholesterol: 47mg 16%, total fat: 5.1g 8% vitamin A: 1%, vitamin C: 0%, calcium: 18%, iron: 4%.

·         Ingredients: two salmon fillets (make it into four halves), pinch of salt, turmeric and pepper, low sodium soy sauce one table spoon, one table spoon lemon juice and zest and two table spoon olive oil.

Directions:

1.      Preheat the oven 400 degree F
2.      Marinate the fish with salt, pepper, soy sauce and lemon.
3.      Cover the baking sheet with an aluminum foil and place the fish.
4.      Add two table spoon of olive oil and cook it for 20 minutes but I cooked it for 30 min to make it little brown.

4. Lentil soup: Calorie: 230, protein 18 g, carbohydrates 40 g.
Ingredients: 1 tablespoon oil, 1 onion, chopped 2 cloves of garlic, finely chopped, one 1/2 cups of red/yellow lentils, 8 cups of vegetable stock, 1 tsp turmeric and one diced tomatoes. Pinch of salt for taste.
Directions: 1.Heat oil in a pan and gently fry the chopped onions for 5 minutes.
2. Add the chopped garlic, turmeric and tomatoes and continue cooking for a few minutes more.
3. Stir in the lentils, add the stock and cook for 35 minutes. Stir several times during cooking, especially towards the end, to prevent lentils from sticking to base of pan.

5. Arugula Salad: Ingredients: 2 tablespoon lemon juice, 3-4 table spoon olive oil, pepper and salt, arugula, cucumber and one tomato.

    Direction: In a salad bowl mix all the ingredients mention above.


I made this dinner for four people but mostly for my mom. I still have half box of arugula and two more cucumber left.
